- 2 medium zucchinis grated
- 1 tsp salt for draining water from zucchini
- 1 large egg
- ¼ cup breadcrumbs or panko for extra crunch
- ¼ cup grated Parmesan cheese
- 1 tbsp fresh parsley chopped (or 1 tsp dried parsley)
- 1 tbsp fresh dill chopped (or 1 tsp dried dill)
- 1 garlic clove minced
- Salt and pepper to taste
- 2 tbsp olive oil for frying
- Optional: sour cream or Greek yogurt for serving
Prepare the Zucchini
Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a colander, sprinkle with 1 teaspoon of salt, and let sit for 10 minutes to draw out excess water.
Drain and Squeeze
After 10 minutes, use a clean kitchen towel or paper towel to squeeze the zucchini to remove as much liquid as possible. This step helps ensure the patties are firm and crispy.
Mix Ingredients
In a large mixing bowl, combine the drained zucchini, egg, breadcrumbs, Parmesan cheese, parsley, dill, garlic, and a pinch of salt and pepper. Mix until well incorporated.
Form the Patties
Take about 2 tablespoons of the mixture and shape it into a small patty. Repeat with the remaining mixture.
Fry the Patties
In a skillet or frying pan, heat 2 tablespoons of olive oil over medium heat. Place the patties in the pan in a single layer (work in batches if needed), and cook for 3–4 minutes on each side, or until golden brown and crispy. Add more oil as needed for additional batches.
Drain and Serve
Transfer the cooked patties to a plate lined with paper towels to absorb any excess oil. Serve warm with a dollop of sour cream or Greek yogurt, if desired.
- Be sure to drain the zucchini well to prevent soggy patties.
- These patties can be made ahead and stored in the refrigerator for up to 2 days. Reheat in a skillet or oven to keep them crispy.
- Add a pinch of red pepper flakes or chopped green onions to the mixture for an extra kick of flavor.
- Serve with a side of marinara sauce for a Mediterranean-inspired twist.
