Ingredients
  

  • 4 slices of sourdough or artisan bread
  • 4 oz Gouda cheese sliced
  • 1 cup mushrooms sliced (cremini, button, or portobello)
  • 1 small onion thinly sliced
  • 2 tbsp olive oil divided
  • 1 tbsp butter softened
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh thyme or parsley for garnish (optional)

Instructions
 

  • Roast the mushrooms and onions:
  • Preheat the oven to 400°F (200°C).
  • Toss the sliced mushrooms and onions with 1 tbsp olive oil, salt, and pepper in a mixing bowl.
  • Spread the mixture on a baking sheet and roast for 10-12 minutes, or until the mushrooms are browned and the onions are tender. Remove from the oven and set aside.
  • Assemble the sandwiches:
  • Lay out the bread slices and layer each with Gouda cheese, then spoon the roasted mushroom and onion mixture on top of the cheese. Top with the remaining slices of bread.
  • Grill the sandwiches:
  • Heat a skillet or griddle over medium heat and add the remaining 1 tbsp of olive oil and 1 tbsp of butter.
  • Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Press lightly with a spatula to ensure even cooking.
  • Serve:
  • Slice each sandwich in half and garnish with fresh thyme or parsley, if desired. Serve warm.
