Ingredients
  

  • 2 boneless skinless chicken breasts
  • 8 cups chicken broth
  • 1 onion halved
  • 3- inch piece of ginger sliced
  • 2 star anise
  • 2 cinnamon sticks
  • 1 tablespoon coriander seeds
  • 1 tablespoon fish sauce
  • 8 oz rice noodles
  • Toppings: bean sprouts Thai basil, lime wedges, jalapeños, hoisin sauce, sriracha

Instructions
 

  • In a large pot, combine chicken broth, halved onion, sliced ginger, star anise, cinnamon sticks, coriander seeds, and fish sauce. Simmer over medium heat for 15-20 minutes until fragrant.
  • Once the broth is infused with flavors, add the chicken breasts to the pot. Simmer for 20-25 minutes until fully cooked. Remove the chicken and set it aside to cool slightly before shredding it.
  • After removing the solids, strain the broth to ensure a clear liquid. Return the broth to the pot, bring it to a boil, and add the rice noodles. Cook the noodles according to package instructions until tender.
  • Using two forks, shred the cooked chicken into bite-sized pieces. Divide the cooked noodles among serving bowls, top them with the shredded chicken, and ladle the hot broth over the top.
  • Serve the Chicken Pho hot, accompanied by bean sprouts, Thai basil, lime wedges, jalapeños, hoisin sauce, and sriracha on the side for garnishing and flavor customization.
