Ingredients
  

  • 1 lb baby potatoes quartered (or diced Yukon or red potatoes)
  • 12 oz smoked sausage sliced into rounds
  • 2 tbsp olive oil
  • 1 1 oz packet ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)

Instructions
 

  • Preheat the oven:
  • Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan with cooking spray or a small amount of oil.
  • Prepare the potatoes:
  • In a large mixing bowl, toss the quartered potatoes with olive oil, ranch seasoning mix, salt, and pepper until evenly coated.
  • Assemble the dish:
  • Spread the seasoned potatoes in an even layer in the prepared baking dish. Arrange the sliced sausage over the top of the potatoes.
  • Cover and bake:
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • Add cheese and finish baking:
  • Remove the foil and sprinkle the shredded cheddar and Parmesan cheeses over the potatoes and sausage. Return to the oven, uncovered, and bake for an additional 15 minutes, or until the potatoes are tender, the cheese is melted, and the dish is bubbly.
  • Serve:
  • Remove from the oven and garnish with fresh parsley or chives, if desired. Serve warm.
