Ingredients
  

  • 4 slices of sourdough or multigrain bread
  • 1 ripe avocado sliced
  • 1 large tomato sliced
  • 4 oz fresh mozzarella cheese sliced
  • 1-2 tbsp basil pesto optional
  • 1 tbsp butter softened
  • Salt and pepper to taste
  • Fresh basil leaves optional, for garnish

Instructions
 

  • Prepare the bread and spread:
  • Lightly spread butter on one side of each slice of bread. If using, spread basil pesto on the opposite side of two slices.
  • Assemble the sandwiches:
  • Layer the mozzarella slices on the pesto side of two slices of bread. Add slices of avocado and tomato, and season with salt and pepper.
  • Top with the remaining bread slices, buttered side facing out.
  • Grill the sandwiches:
  • Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 2-3 minutes on each side, or until the bread is golden and crispy and the mozzarella is melted. Press gently with a spatula for even browning.
  • Serve:
  • Slice each sandwich in half and garnish with fresh basil if desired. Serve warm.
