- 4 slices of sourdough or multigrain bread
- 1 ripe avocado sliced
- 1 large tomato sliced
- 4 oz fresh mozzarella cheese sliced
- 1-2 tbsp basil pesto optional
- 1 tbsp butter softened
- Salt and pepper to taste
- Fresh basil leaves optional, for garnish
Prepare the bread and spread:
Lightly spread butter on one side of each slice of bread. If using, spread basil pesto on the opposite side of two slices.
Assemble the sandwiches:
Layer the mozzarella slices on the pesto side of two slices of bread. Add slices of avocado and tomato, and season with salt and pepper.
Top with the remaining bread slices, buttered side facing out.
