Ingredients
  

  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 lbs fresh tomatoes chopped
  • 1/4 cup fresh basil leaves
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1/2 cup heavy cream optional

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until onions are translucent and garlic is fragrant.
  • Stir in the chopped tomatoes and fresh basil leaves, cooking until the tomatoes start to break down and release their juices, about 10-15 minutes.
  • Pour in the vegetable broth, season with salt and pepper to taste, and bring the soup to a simmer. Let it cook for another 15-20 minutes to allow the flavors to meld together.
  • Using an immersion blender, carefully blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth before returning it to the pot.
  • If desired, stir in the heavy cream to add richness to the soup. Let it simmer for an additional 5 minutes before serving.
  • Taste and adjust seasoning if needed, then ladle the tomato basil soup into bowls, garnish with additional fresh basil leaves, and serve hot.
