Ingredients
  

  • For the Crust and Crumble
  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup 2 sticks unsalted butter, cold and cubed
  • 1 large egg
  • For the Peach Filling
  • 6-7 medium ripe peaches about 4 cups, diced
  • ½ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon optional

Instructions
 

  • Step 1: Prep and Preheat
  • Preheat your oven to 350°F (175°C).
  • Line a 9x13-inch baking dish with parchment paper, leaving some overhang for easy removal.
  • Step 2: Make the Crust and Crumble
  • In a large mixing bowl, combine flour, sugar, baking powder, and salt. Whisk to mix.
  • Add the cold, cubed butter and use a fork or pastry cutter to cut it into the flour mixture until it resembles coarse crumbs.
  • Add the egg and mix until the dough starts to come together but is still crumbly.
  • Press about two-thirds of the dough into the prepared baking dish, pressing firmly to create an even base. Reserve the remaining dough for the crumble topping.
  • Step 3: Prepare the Peach Filling
  • Dice the peaches into small chunks. If preferred, peel them before cutting.
  • In a medium bowl, toss the diced peaches with sugar, cornstarch, vanilla extract, and cinnamon (if using). Mix well to coat the peaches evenly.
  • Step 4: Assemble the Bars
  • Spread the peach mixture evenly over the crust in the baking dish.
  • Sprinkle the reserved crumble mixture over the peach filling, covering most of the peaches.
  • Step 5: Bake
  • Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the filling is bubbly.
  • Remove from the oven and let cool completely in the pan.
  • Step 6: Slice and Serve
  • Once cool, lift the bars out of the pan using the parchment paper overhang.
  • Slice into squares or rectangles. Serve as is or with a scoop of vanilla ice cream.

Peach Prep: If your peaches are overly juicy, let them drain for a few minutes after dicing to prevent a soggy crust.
