Ingredients

For the Chashu Pork

  • 1 lb Pork belly
  • Salt and pepper to season
  • 2 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 2 tablespoons Sake
  • 1 tablespoon Sugar

For the Miso Ramen Broth

  • 4 cups Chicken or pork broth
  • 2 cups Water
  • 3 tablespoons Miso paste red or white
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • 2 cloves Garlic minced
  • 1 inch Ginger grated

For the Ramen Assembly

  • 4 Servings ramen noodles
  • 2 cups Spinach or bok choy blanched
  • 2 Boiled eggs halved
  • Corn kernels as desired
  • Bamboo shoots as desired
  • Green onions chopped, for garnish
  • Naruto maki fish cake, if available
  • Seaweed sheets nori, sliced, for garnish

Instructions

Prepare the Chashu Pork

  • Season the pork belly with salt and pepper. Roll it up and tie with kitchen string to hold its shape.
  • Brown the pork belly in a pan over medium heat to render out some fat and give it color.
  • Simmer the pork: Mix soy sauce, mirin, sake, and sugar in a pot. Add the pork belly, cover with water, and simmer for about 2-3 hours until tender. Once cooked, let it cool in the liquid, then slice thinly.

Make the Miso Ramen Broth

  • Combine the broth and water in a large pot and bring to a simmer.
  • Add the miso paste, soy sauce, sesame oil, minced garlic, and grated ginger. Stir until the miso is fully dissolved and the broth is flavorful. Adjust seasoning as needed.

Assemble the Ramen

  • Cook the ramen noodles according to package instructions, then drain.
  • Prepare the toppings: Blanch the spinach or bok choy and prepare the boiled eggs, corn, bamboo shoots, and green onions.
  • Serve: Divide the noodles among bowls. Ladle the hot broth over the noodles. Arrange slices of chashu pork, spinach or bok choy, half an egg, corn, bamboo shoots, naruto maki, and seaweed on top. Garnish with chopped green onions.

Notes

  • Adjust the toppings based on availability and preference. The essence of ramen is in its customization.
  • For the broth, homemade chicken or pork broth will give the best flavor, but store-bought broth can work in a pinch.
  • Naruto maki (fish cake with a pink swirl) is a classic ramen topping and pays homage to Naruto Uzumaki, but it can be omitted if not available.
