  • ¼ cup granulated sugar
  • 1 cup heavy cream
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • 2 tsp matcha green tea powder culinary grade or higher

Instructions

  • Preheat the oven to 325°F (165°C) and place the ramekins in a baking dish to prepare for baking.
  • In a saucepan, heat the cream mixture and sugar until simmering, then allow it to steep off the heat to infuse the flavors.
  • In a mixing bowl, whisk together the egg yolks, matcha powder, and vanilla extract until a smooth custard base forms.
  • Slowly pour the hot cream mixture into the matcha custard base while whisking continuously to ensure a well-combined mixture.
  • Strain the custard through a sieve into a pouring jug, then carefully distribute it among the ramekins evenly.
  • Create a water bath in the baking dish by filling it halfway up the sides of the ramekins, then bake for 30-35 minutes until the edges are set with a slight jiggle in the center. Chill the crème brûlée for a minimum of 2 hours before serving.

Notes

Make sure to strain the mixture to remove any lumps for a smooth texture.
Adjust the sweetness by varying the amount of sugar according to your preference.
Use a kitchen torch for the perfect caramelized sugar topping.
Experiment with different flavors like adding citrus zest for a twist.
Ensure the water bath in the oven to prevent the custard from curdling.
