Ingredients

  • 1 ½ cups graham cracker crumbs about 12 full crackers
  • cup granulated sugar
  • 6 tbsp unsalted butter melted
  • For the Filling:
  • 4 large egg yolks
  • 1 can 14 oz sweetened condensed milk
  • ½ cup fresh key lime juice or regular lime juice
  • 1 tbsp lime zest
  • For the Topping:
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • Lime slices or zest for garnish

Instructions
 

  • Preheat the oven to 350°F (175°C) to ensure it’s ready for baking the pie later on.
  • In a bowl, combine the sweetened condensed milk, key lime juice, key lime zest, and egg yolks to create the creamy filling for the pie.
  • Press the crumb mixture firmly into the pie dish, forming a solid crust base that will hold the creamy filling.
  • Pour the creamy filling into the crust, making sure it’s spread evenly to bake into a smooth and delicious pie.
  • Bake the pie for about 15 minutes until the filling is set and the crust is golden brown.
  • Once baked, cool the pie at room temperature before transferring it to the refrigerator to chill for at least 2 hours, allowing the flavors to meld perfectly.

For a twist, use a chocolate cookie crust instead of graham crackers.
If key limes are not available, regular lime juice and zest can be substituted.
To save time, use a store-bought graham cracker crust.
