Garlic Butter Shrimp and Vegetables

Ingredients
  

  • For the Shrimp:
  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • For the Vegetables:
  • 1 cup zucchini diced
  • 1 cup bell peppers sliced
  • 1 cup cherry tomatoes halved
  • ½ cup asparagus cut into 1-inch pieces
  • For the Garlic Butter Sauce:
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • ½ tsp red pepper flakes optional
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley chopped

Instructions
 

  • Step 1: Prepare the Shrimp
  • In a mixing bowl, toss shrimp with olive oil, salt, black pepper, paprika, and garlic powder.
  • Let the shrimp marinate while preparing the vegetables.
  • Step 2: Sauté the Vegetables
  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Add zucchini, bell peppers, asparagus, and cherry tomatoes.
  • Sauté for 5-7 minutes, stirring occasionally, until the vegetables are slightly tender but still crisp.
  • Remove the vegetables from the skillet and set aside.
  • Step 3: Cook the Shrimp
  • In the same skillet, add the seasoned shrimp in a single layer.
  • Cook for 2-3 minutes per side, or until shrimp turn pink and opaque.
  • Remove the shrimp and set aside with the vegetables.
  • Step 4: Make the Garlic Butter Sauce
  • Reduce heat to medium-low and add butter and minced garlic to the skillet.
  • Sauté for 30 seconds, stirring continuously to prevent burning.
  • Stir in red pepper flakes (if using) and lemon juice.
  • Step 5: Combine and Serve
  • Return the cooked vegetables and shrimp to the skillet.
  • Toss everything together until well coated in the garlic butter sauce.
  • Garnish with fresh parsley and serve hot.

Notes

Don’t overcook the shrimp—they cook quickly and can become rubbery.
Add a dash of white wine to the garlic butter sauce for extra depth of flavor.
Serve with rice, pasta, or a side salad for a complete meal.
