  • For the Chicken:
  • 6 boneless skinless chicken thighs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tbsp olive oil
  • For the Garlic Butter Sauce:
  • 3 tbsp unsalted butter
  • 5 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • ½ tsp red pepper flakes optional, for a little heat
  • Juice of ½ lemon
  • ¼ cup chicken broth

Instructions

  • Step 1: Season the Chicken
  • In a small bowl, mix together salt, black pepper, smoked paprika, garlic powder, and onion powder.
  • Pat the chicken thighs dry with a paper towel and sprinkle both sides with the seasoning mixture.
  • Step 2: Sear the Chicken
  • Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.
  • Place the chicken thighs in the pan and cook for 5-6 minutes per side, until golden brown and cooked through.
  • Remove the chicken from the pan and set it aside on a plate.
  • Step 3: Make the Garlic Butter Sauce
  • Reduce the heat to medium-low and add butter to the same pan.
  • Once melted, add the minced garlic and cook for 30 seconds, stirring frequently until fragrant.
  • Stir in the chicken broth and scrape up any browned bits from the bottom of the pan for extra flavor.
  • Add lemon juice, red pepper flakes, and fresh parsley, then stir well.
  • Step 4: Coat the Chicken in the Sauce
  • Return the chicken thighs to the pan and coat them in the garlic butter sauce.
  • Let the chicken simmer in the sauce for 2 minutes, spooning the sauce over the top.
  • Step 5: Serve and Enjoy
  • Remove from heat and serve warm, garnished with extra parsley and lemon wedges.
  • Enjoy with mashed potatoes, rice, roasted vegetables, or a fresh salad!

Notes

✔ Golden crust: Let the chicken sear without moving it too much to get a nice golden-brown crust.
✔ Juiciness: Boneless skinless chicken thighs stay moist, but avoid overcooking—use a meat thermometer (165°F / 75°C internal temperature).
✔ Extra flavor: Add parmesan cheese or a splash of heavy cream to the sauce for a richer taste.
✔ Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in a pan over low heat to maintain juiciness.
