  • Dip each eggplant slice into the beaten eggs, ensuring they are fully coated, then generously coat them with the breadcrumb and cheese mixture for that extra crunch.
  • Arrange the coated eggplant slices on the prepared baking sheet in a single layer, and bake them for about 20 minutes until they turn golden brown and crispy.
