Ingredients
  

  • For the Meatloaf:
  • 1 lb ground beef 80% lean
  • 1 lb ground pork or substitute with ground turkey for a leaner option
  • 1 cup Italian-style breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 large egg beaten
  • 1 cup marinara sauce divided
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Topping:
  • 1 cup shredded mozzarella cheese
  • ¼ cup chopped fresh basil or parsley for garnish optional

Instructions
 

  • Preheat Oven
  • Preheat your oven to 375°F (190°C). Grease a loaf pan lightly with cooking spray or line it with parchment paper for easy removal.
  • Combine Meatloaf Ingredients
  • In a large mixing bowl, combine the ground beef, ground pork, Italian-style breadcrumbs, Parmesan cheese, beaten egg, ½ cup marinara sauce, Italian seasoning, garlic powder, onion powder, salt, and pepper. Mix until well incorporated, being careful not to overmix as this can make the meatloaf tough.
  • Form and Bake the Meatloaf
  • Transfer the meat mixture to the prepared loaf pan and press it down evenly. Spread the remaining ½ cup of marinara sauce on top of the meatloaf, smoothing it with a spatula for even coverage.
  • Bake
  • Bake in the preheated oven for 50 minutes. Carefully remove from the oven and sprinkle the shredded mozzarella cheese evenly over the top of the meatloaf.
  • Finish Baking
  • Return the meatloaf to the oven and bake for an additional 10 minutes, or until the cheese is melted, bubbly, and the internal temperature of the meatloaf reaches 160°F (70°C) when checked with a meat thermometer.
  • Garnish and Serve
  • Allow the meatloaf to rest for 5 minutes before slicing. Garnish with fresh basil or parsley if desired, and serve with additional marinara sauce on the side.
