Ingredients
  

  • 1 lb ground beef or ground turkey for a lighter option
  • 1 packet taco seasoning mix
  • ¾ cup water
  • 1 head Romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup shredded cheddar cheese
  • 1 cup canned black beans drained and rinsed
  • 1 cup canned corn drained
  • ½ cup red onion diced
  • 1 cup Catalina or ranch dressing
  • 3 cups Nacho Cheese Doritos slightly crushed
  • Optional toppings: sliced jalapeños chopped cilantro, diced avocado, or sour cream

Instructions
 

  • Cook the Ground Beef
  • In a large skillet over medium heat, cook the ground beef until fully browned, breaking it up with a spatula as it cooks. Drain any excess grease, then add the taco seasoning and water. Stir well and let simmer for 3–5 minutes until the meat is well-seasoned and the liquid is absorbed. Remove from heat and let cool slightly.
  • Prepare the Salad Base
  • In a large serving bowl, combine the chopped Romaine lettuce, cherry tomatoes, shredded cheddar cheese, black beans, corn, and diced red onion. Toss lightly to mix.
  • Add the Ground Beef
  • Once the seasoned ground beef has cooled slightly, add it to the salad mixture in the bowl.
  • Add the Dressing and Doritos
  • Pour the Catalina or ranch dressing over the salad ingredients, then add the crushed Doritos. Gently toss until all ingredients are well coated and evenly distributed.
  • Serve and Garnish
  • Top with optional ingredients like sliced jalapeños, chopped cilantro, diced avocado, or a dollop of sour cream for added flavor and color. Serve immediately to maintain the crunch of the Doritos.
