Equipment

  • Slow cooker
  • Cheesecloth
  • Cooking twine
  • Ladle

Ingredients

  • 2 large onions halved
  • 4- inch piece of ginger sliced
  • 4-5 star anise
  • 6 whole cloves
  • 1 cinnamon stick
  • 1 tablespoon coriander seeds
  • 1 tablespoon fennel seeds
  • 6 cups beef broth
  • 4 cups water
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • Salt to taste

Instructions

  • Begin by charring the halved onions and sliced ginger in a dry skillet over medium heat for about 5 minutes per side to intensify their flavors.
  • Create a spice pouch by combining star anise, cloves, cinnamon stick, coriander seeds, and fennel seeds in cheesecloth for easy removal later.
  • In the slow cooker, add the charred onions, ginger, spice pouch, beef broth, water, fish sauce, sugar, and salt to start infusing the flavors.
  • Cover the slow cooker and let the broth simmer on low for 8-10 hours or on high for 4-6 hours, allowing the spices to meld and enrich the broth.
  • After the cooking time, remove the spice pouch, onions, and ginger using a fine mesh strainer to achieve a clear and flavorful broth.
  • Taste the broth and adjust the seasoning if needed to ensure a well-balanced and aromatic base for your homemade Pho bowls.
