Ingredients
  

  • 4 boneless skinless chicken breasts or thighs
  • 1/2 cup sundried tomatoes oil-packed, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 4 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • 1 tablespoon olive oil optional, for searing
  • 1/4 cup chopped fresh basil or parsley for garnish

Instructions
 

  • Season the chicken with salt, pepper, and Italian seasoning. If desired, sear the chicken in a skillet with olive oil until browned on both sides.
  • Place the chicken in the bottom of the crockpot.
  • In a mixing bowl, whisk together heavy cream, chicken broth, Parmesan cheese, garlic, sundried tomatoes, and red pepper flakes.
  • Pour the sauce over the chicken, ensuring it is well-coated.
  • Cover and cook on Low for 4-5 hours, or on High for 2-3 hours, until the chicken is cooked through.
  • Stir the sauce and taste. Adjust seasoning as needed.
  • Serve the chicken with sauce over pasta, rice, or mashed potatoes. Garnish with chopped fresh basil or parsley.
