Ingredients
  

  • 4-6 boneless or bone-in chicken breasts or thighs
  • 1 large lemon zested and juiced
  • 5-6 cloves of garlic minced
  • 1 cup chicken broth or stock
  • 1 tbsp olive oil or butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Fresh rosemary or thyme sprigs optional
  • Lemon slices for garnish
  • Fresh parsley for garnish

Instructions
 

  • Season the chicken with salt, pepper, paprika, and dried herbs.
  • Optional: Sear the chicken in a skillet with olive oil until golden brown.
  • Place half of the lemon slices and herbs at the bottom of the Crock Pot.
  • Add the chicken, garlic, lemon zest, and remaining herbs.
  • Pour in the chicken broth and top with the remaining lemon slices.
  • Cook on Low for 5-6 hours, or on High for 2-3 hours.
  • Serve the chicken topped with sauce, garnished with lemon slices and fresh parsley.

  • For a thicker sauce, remove the chicken and simmer the remaining liquid on the stove.
