  • Cooling rack

Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 cup white sugar
  • 5 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup strongly brewed coffee
  • 1 14 ounces can sweetened condensed milk
  • 1 12 ounces can evaporated milk
  • 1 cup heavy cream
  • 1 teaspoon instant coffee granules

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  • In a bowl, combine the all-purpose flour, baking powder, and salt. Cream together the softened unsalted butter and white sugar until fluffy. Add eggs one at a time, ensuring thorough mixing after each addition, and then incorporate the vanilla extract for a fragrant essence.
  • Gradually blend the dry flour mixture into the wet ingredients, alternating with the whole milk and strongly brewed coffee to form a smooth batter. Transfer the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  • While the cake bakes, mix the sweetened condensed milk, evaporated milk, and heavy cream to create the soaking mixture. Once the cake is baked, use a fork to poke holes all over it and pour the milk mixture evenly on top. Let the cake cool completely, then refrigerate for a minimum of 2 hours to allow the flavors to meld.
  • Whip the heavy cream with instant coffee granules until stiff peaks form, infusing the topping with a delightful coffee flavor. Spread the coffee-infused whipped cream over the chilled cake, enhancing both its visual appeal and taste.
  • Indulge in a slice of this moist and flavorful Coffee Tres Leches Cake, relishing the harmonious blend of coffee-spiked sponge cake and rich milk mixture that promises a truly delightful dessert experience.

Notes

For a stronger coffee flavor, increase the amount of coffee in the cake batter.
Make sure to refrigerate the cake for a few hours to allow it to soak up the milk mixture properly.
Customize the topping by adding chocolate shavings or a sprinkle of cinnamon.
To save time, you can use store-bought whipped cream instead of making it from scratch.
