  • Preheat the oven to 375°F (190°C) and prepare the ramekins by greasing them with butter, then place them on a baking sheet for easy transfer in and out of the oven.
  • Combine the melted bittersweet chocolate and unsalted butter, then stir in the all-purpose flour to form a thick paste, creating the base for the soufflé mixture.
  • Warm the whole milk until steaming, then slowly whisk it into the chocolate mixture, ensuring a smooth and creamy blend. Add the egg yolks one at a time, mixing thoroughly after each addition.
  • In a separate bowl, beat the egg whites with cream of tartar and a pinch of salt until stiff peaks form, ensuring a light and airy consistency. Carefully fold the fluffy egg whites into the chocolate mixture to maintain the soufflé’s airy texture.
