  • 1/2 cup unsalted butter
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups heavy cream
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 4 oz semisweet chocolate chopped
  • 1 tbsp corn syrup

Instructions
 

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • In a saucepan, heat water, butter, and salt until boiling. Stir in flour until a dough ball forms, then transfer it to a mixing bowl.
  • Beat in eggs one at a time until the dough is smooth and glossy. Transfer the dough to a piping bag and pipe out éclair shapes onto the prepared baking sheet.
  • Bake the éclairs for 30 minutes until they are golden brown, then allow them to cool completely.
  • In a separate saucepan, heat cream, sugar, and vanilla extract until simmering. Remove from heat and stir in chopped chocolate and corn syrup until the mixture is smooth and well combined.
  • Cut the cooled éclairs in half horizontally. Either pipe or spoon the chocolate filling inside each éclair. Serve these delightful chocolate éclairs and savor every bite.
