Chicken Parmesan and Spaghetti

A crispy, golden-brown chicken Parmesan topped with melty mozzarella and marinara sauce, served over a bed of spaghetti. A classic comfort dish!

Ingredients
  

  • For the Chicken:
  • 2 large boneless skinless chicken breasts
  • 1 cup Italian-style breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 egg beaten
  • ½ cup all-purpose flour
  • 2 tbsp olive oil for frying
  • For Topping:
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tbsp fresh basil chopped (optional)
  • For the Spaghetti:
  • 8 oz spaghetti
  • 1 tbsp olive oil
  • ½ tsp salt

Instructions
 

  • Step 1: Prepare the Chicken
  • Preheat oven to 375°F (190°C).
  • Butterfly the chicken breasts (slice them horizontally into two thinner pieces). This helps them cook evenly.
  • Set up a breading station with three bowls:
  • Bowl 1: All-purpose flour
  • Bowl 2: Beaten egg
  • Bowl 3: Italian breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and black pepper
  • Dredge each piece of chicken in flour, then dip into the beaten egg, and finally coat with the breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure they stick.
  • Step 2: Fry the Chicken
  • Heat 2 tbsp olive oil in a large skillet over medium heat.
  • Add the breaded chicken pieces and cook for 3-4 minutes per side until golden brown.
  • Remove and transfer to a baking sheet lined with parchment paper.
  • Step 3: Add Sauce and Cheese, Then Bake
  • Spoon 2-3 tbsp marinara sauce over each piece of fried chicken.
  • Sprinkle shredded mozzarella cheese evenly on top.
  • Bake for 12-15 minutes, or until the cheese is melted and bubbly.
  • Step 4: Cook the Spaghetti
  • Bring a large pot of salted water to a boil.
  • Add 8 oz spaghetti and cook according to package instructions (usually 8-10 minutes).
  • Drain and toss with 1 tbsp olive oil to prevent sticking.
  • Step 5: Assemble and Serve
  • Place a portion of spaghetti on a plate.
  • Top with the baked chicken Parmesan.
  • Garnish with fresh basil and extra Parmesan if desired.

Notes

For extra crispiness, broil the chicken for 2 minutes before serving.
Use fresh mozzarella for a richer, creamier melt.
You can use panko breadcrumbs for an even crispier crust.
