Instructions
 

  • Begin by flattening the chicken breasts to an even thickness using a meat mallet. Season them generously with salt and pepper, then coat them in flour, shaking off any excess.
  • In a large skillet over medium-high heat, melt 2 tablespoons of butter with olive oil. Add the chicken breasts and cook until they turn golden brown on both sides, approximately 5 minutes per side. Once done, transfer the chicken to a plate and set it aside.
  • Using the same skillet, add the remaining butter and sauté the sliced mushrooms until they release their juices and start to brown. Pour in the Marsala wine and chicken broth, ensuring to scrape up any browned bits from the bottom of the skillet.
  • Return the cooked chicken to the skillet, cover it, and let it simmer for about 10 minutes until the chicken is fully cooked. Stir in the heavy cream and allow the mixture to simmer for an additional 2-3 minutes to thicken the sauce.
  • Before serving, garnish the Chicken Marsala with freshly chopped parsley. This adds a pop of freshness and color to the dish, enhancing its visual appeal and flavor profile.
